The Organic Benefit: Research on Nutrition

This workshop will focus on current research examining the nutritional benefits of organic products, with the goal of helping farmers to better understand and differentiate their products. We’ll go over the theories behind why organic management could result in increased antioxidant levels and peer-reviewed publications documenting support for these theories. We’ll also look at nutritional profiles and research on specific commodities such as specialty crops, dairy, and meat production. Finally, we’ll talk about the flaws of many nutritional comparison studies and the difficulty with designing and conducting a study comparing nutritional profiles across management styles. Examples of past and present patterns of research and potential directions for future areas of interest and research will be examined as well.
