Recent interest in einkorn, emmer, and spelt, known as the “ancient grains,” has led to a demand that exceeds their supply. These wheats differ from modern wheat as they are harvested with the hull intact and must be hulled later during processing. Recent development of these crops in the central Great Plains region will be covered in this workshop. The interaction of University agronomists, NGO’s, and farmers to re-develop these crops will be highlighted, including information from research trials and results from farmer’s fields. Current recommendations for growing, marketing, and sourcing seed of these crops will also be covered.
