The CSA model has been around long enough to spawn new approaches, such as meat shares and winter CSAs. Harry will talk about meat CSAs using various livestock, noting the differences in behavior, adaptation, feed requirements, and cost of purchasing, raising, and marketing. Paul will talk about pushing the CSA model into the winter in the Upper Midwest, including specifics on commercial kitchens, planning, labor, and unforeseen challenges.

Harry Carr and his wife, Gwen, started Mint Creek Farm in 1992 as an organic livestock farm with sheep. Now, they also have goats, cows, pigs, chickens, ducks, and turkeys, sold at farmers’ markets, and through a growing Meat CSA.

Paul Burkhouse and his wife, Chris, have run Foxtail Farm CSA for 17 years, selling solely through a winter CSA for the last two years. Their eight winter deliveries include vegetables from season extension, fresh greens from hoop houses, storage crops from extensive root cellars and value-added items from their licensed processing kitchen.
